
There are a handful of recipes out there that if given the opportunity (and without repercussions) I would totally eat for daaaays. I know I should stop eating it but can’t stop, won’t stop?! Yep, bacon fried rice is one of them! Just hand me a spoon and let me have at it!
My other favorites include Scalloped potatoes, stuffing and fresh baked chocolate croissants but we’ll get to those another day.
Bacon Fried Rice Recipe!

Bacon fried rice is also one of my kids favorite foods and one of the very few ways they will eat vegetables. I don’t like the idea of sneaking vegetables in their food because I want them to get used to what it looks like, the color and the smell. Instead, I try to incorporate vegetables into the recipe so that it’s visible but mixed in with something they really really like (aka. bacon) so they don’t mind as much trying and eating the veggies.
Let me tell you, the kids gobbled this up like it was their job! And as a mama, one of my greatest pleasures in life is cooking something my family LOVES!
Cold, day old rice is key here as well as thick cut bacon. I used regular thick cut bacon but you can also make this dish with Applewood Smoked bacon which is also bomb.com!
Emilia is the pickiest of eaters and she will fight me tooth and nail to not eat……unless its bacon fried rice!

How To Make Bacon Fried Rice

- Heat up a large cast iron or non-stick wok and cook the bacon until crispy. Set it aside on a paper towel lined plate. Discard 80% of the bacon grease and leave the rest in the wok.
- Add the butter, shallots, garlic and the white parts of the green onion. Your kitchen will small AMAZING!
- Add the cold day old rice and mix well using a rice spatula.
- Add the frozen vegetables and mix well.
- Make a well in the middle of the wok and add the avocado oil. Add the eggs and cook until its done and then mix well with the rest of the rice.
- Add back the cooked bacon, the green parts of the green onion and fresh ground pepper and mix really well.
- {OPTIONAL} Add a fried egg on top of your bacon fried rice and drizzle some Sriracha sauce.

Bacon Fried Rice
Equipment
- Large Wok
- Chef's Knife
- Frying Pan
- Large Cutting Board
- Rice Spatula
- Wooden Spoons
Ingredients
- 5 cloves Garlic, minced
- 2 stalks Green onion, diced (whites separated)
- 1 Shallot, diced
- 6 slices Thick cut bacon
- 1/2 lb Frozen Mixed Vegetables
- 2 cups Cold day old rice
- 3 tbsp Butter
- 1 tbsp Soy Sauce
- 1 tsp Avocado Oil
- 2 Eggs, beaten
- Fresh ground pepper
Instructions
- In a large wok, fry the bacon until crispy and set aside on a paper towel lined plate.
- Discard 80% of the bacon grease but leave the rest in the wok.
- On medium heat, add the butter.
- Add the garlic, shallots, and white parts of the green onion.
- Sauté for a minute making sure the garlic doesnt burn.
- Add the rice and mix everything together really welll using a rice spatula and wooden spoon.
- Add the frozen vegetables and mix well again for a few minutes.
- Make a well with the rice and add the avocado oil. Add the eggs and scramble it right in the wok. Mix it all together again and add the freshly ground pepper and soy sauce.
- Add the bacon and the green parts of the green onion and serve.
- {Optional} Add a fried egg on top and drizzle some Sriracha sauce.
