In a large wok, fry the bacon until crispy and set aside on a paper towel lined plate.
Discard 80% of the bacon grease but leave the rest in the wok.
On medium heat, add the butter.
Add the garlic, shallots, and white parts of the green onion.
Sauté for a minute making sure the garlic doesnt burn.
Add the rice and mix everything together really welll using a rice spatula and wooden spoon.
Add the frozen vegetables and mix well again for a few minutes.
Make a well with the rice and add the avocado oil. Add the eggs and scramble it right in the wok. Mix it all together again and add the freshly ground pepper and soy sauce.
Add the bacon and the green parts of the green onion and serve.
{Optional} Add a fried egg on top and drizzle some Sriracha sauce.
