Guys, please do me a favor. The next time you make Sinigang, I NEED you to cook it in your Instant Pot! I honestly will not make it any other way ever again! It’s done in less than hour, the meat is falling off the bones and it’s nuts how flavorful the broth is!

For those who are new to this dish, it’s only the most epic Filipino soup dish you’ll ever have. It’s a Filipino sour soup that is made with tamarind and is best served with white rice.

Vietnam has their Pho, China has their Wonton Soup and the Philippines has their Sinigang.

Instant Pot Pork Sinigang Recipe!

There are lots of different variations of Sinigang out there using different types of meat for the soup….fish, shrimp, pork, even beef. My favorite protein to put in my Sinigang is Baby Back Short Ribs. And cooking it in my Instant Pot is next level good! The flavors, the tenderness of the meat….ooooh yeahhhh! OK, I’m drooling now.

As far as vegetables go, you can put just about anything but I love adding really dark leafy greens such Chinese green mustard, spinach, or bok choy. I’ll also throw in some green beans, okra and eggplant. They didn’t have okra at my local market when I made this but I survived without it.

In my recipe, I use 10 cups of water and put 1 1/2 packets of the Tamarind Soup Base (Sinigang) mix because I like mine sour. Like really sour. Feel free to adjust your level of sourness by adding the packet mix a little at a time and then tasting as you go. I say 1 packet per 10 cups of water is good if you like it less sour.

OK, now for the step-by-step instructions. But honestly, is it even necessary because its literally throwing everything in the Instant Pot but here it is below anyways.

How To Make Pork Sinigang In The Instant Pot

  1. Prep the vegetables by cutting off the ends of the green beans and the ends (tough part) of the Chinese green mustard.
  2. Wash all the vegetables really well.
  3. Season the baby back ribs with salt and chop up the tomatoes.
  4. Add the baby back ribs and the tomatoes into the Instant Pot and pour the 10 cups of water in.
  5. Put the lid on and set the Instant Pot to High Pressure for 30 minutes.
  6. Once it’s done, manually release the pressure of the Instant Pot. Be careful doing this and always use a towel to release the pressure.
  7. Remove the lid and set the Instant Pot to the Sauté mode.
  8. Add the Tamarind soup mix, green banana peppers and green beans and let it cook for about 5-7 minutes.
  9. Cut the eggplant about 2 inches in length and add it to the pot. Cook for another 3 minutes.
  10. Add the Chinese green mustard and remove after 1-2 minutes. This cooks really fast!
  11. Serve with white rice.
  12. Purely optional but highly suggested, eat this with a side of shrimp paste (“bagoong”) to enhance the flavor of the Tamarind Sinigang soup.

  • Knife
  • Cutting Board
  • Large Collander

Ingredients
  

  • 2 lbs Baby Back Ribs
  • 2 Yellow Banana Peppers
  • 1/2 lb Green Beans
  • 1 Large Bunch of Chinese Mustard Greens *You can also use Spinach, Bok Choy or any leafy green vegetable you like.
  • 1 Eggplant, cut into small pieces *Don't cut the eggplant until ready to cook otherwise it will turn brown.
  • 1 Tomato, chopped
  • 1 1/2 package Tamarind Soup Base Mix
  • 10 cups Water
  • 1 tbsp Salt

Instructions
 

  • Cut the ends (tough part) of the Mustard Greens and cut off the tips of the green beans.
  • In a large collander, wash the vegetables really well.
  • Season the baby back ribs with salt on both sides. Place it in the Instant Pot and pour 10 cups of water. Add the chopped tomatoes.
  • Put the lid on and set the Instant Pot to High Pressure for 30 minutes.
  • Once done, manually release the pressure, remove the lid and remove the scum that has floated to the top of with a spatula.
  • Set the Instant Pot to the Sauté mode for 15 minutes.
  • Add the Tamarind Soup Mix, peppers and green beans and let it cook for about 5-7 minutes.
  • Cut the eggplant and add it to the Instant Pot. Cook this for about 3 minutes
  • Finally, add the mustard greens and remove after 1-2 minutes. This cooks really fast.
  • Serve with white rice.
  • {Optional} Enhance the flavor of the Sinigang by eating it with a side of shrimp paste.
